These large institutions have enormous food needs, and thus an enormous power to influence our local food economy. They've chosen responsibility and sustainability by promoting locally grown food on their campuses.

Cooper University Hospital, beginning in the Spring/Summer of 2008 is offering a CSA to employees. During the growing season the Food and Nutrition Department and the Cranberry Bistro will be purchasing local produce direct from farm to institution. rBGH free local milk is served to all patients, employees and visitors. Fair Trade coffee is brewed up in the employee “Marketplace” and the administrative offices.

The Atrium cafeteria, open to the community, is committed to supporting local farmers. We feature Fair Trade/Organic Coffee, local seasonal produce, organic yogurt and cage free eggs. Jefferson sponsors a weekly outdoor Farmers' Market to link local farms to our community. Winners of the 2007 EPA Trailblazer Award.
